Parsley-Almond Pesto
Here's a versatile pesto. It's great with goat cheese as an appetizer, mixed with balsamic vinegar as a vinaigrette, spread on sandwiches, tossed with steamed carrots, or mixed with a little cream and chicken broth and served over pasta.
Roasted Mussels with Almonds and Garlic
This recipe can be prepared in 45 minutes or less.
Pear and Almond Frangipane with Apricot Sauce
A French flourless nut cake, topped with poached pears, is lovely for Hanukkah.
Crunchy Spice Cookies
Piparelli
Abstinence during Lent means that for the forty days preceding Easter, Catholics all over Sicily are supposed to eat cucina magra (literally, lean food). This means no meat, no fat, no eggs. Theoretically. Modern Catholics get to choose what they give up for Lent, and this is called fare un fioretto, or making a sacrifice. There is little indication that pastries and sweets are even near the top of the "to give up" list, other than the presence of quaresimali, the general term for the category of austere cookies that appear in pastry shops during the spring. Piparelli are the Lenten cookies that the people of Messina like best. At the Pasticceria Vinci Domenico in Messina, piparelli are such a favorite that they're now made year-round.
Chocolate and Almond Spumoni
(SPUMONE AL CIOCCOLATO E MANDORLE)
Here's an elegant dessert of Neapolitan origin that manages to be rich and light at the same time. Its airy texture is reflected in its name, which comes from the Italian word for foam, spuma.
Brazilian Banana and White Chocolate Ice Cream Torte
Giving a nod to tropical fruit, this irresistible treat combines rich ice cream with a nut crust and thick fudge sauce.
Spiced Marcona Almonds
If you have trouble finding Marcona almonds, you can substitute regular blanched almonds.

Caramelized Nectarine-Almond Phyllo Cups with Frozen Orange Mousse
This lovely finale is from Dwayne Fortier of La Reserve in Houston. Begin preparing it well before serving, as the mousse needs to freeze for at least six hours.

Green Olive and Almond Tapenade
"One night when friends were coming over for cocktails, I wanted to make some hors d'oeuvres," says Amy Sue Keck of San Diego, California. "Though most tapenades I've tasted have been made with black olives and anchovies, I only had green olives in my cabinet—and no anchovies! So I added some toasted almonds instead, and my green "tapenade" was a hit. I still make it this way."
Old-Style Apple and Almond Pudding
One for the nut-lover. A refreshing apple compote is topped with an almond (or hazelnut) sponge. Simple and delicious, it's an ideal Passover dessert.
Frozen Raspberry Zabaglione on Meringues with Chocolate Sauce
Zabaglione is the Italian version of the foamy, custardy sauce known as sabayon in France. I found that freezing it for this dessert gave it a texture much like that of ice cream. For an extra-pretty presentation, garnish this with fresh raspberries, orange segments, mint leaves and additional sliced, toasted almonds.
Lemon Cornmeal Cake with Raspberry Filling
Cornmeal gives this cake a coarse texture that is a delightful foil for the smooth filling and whipped cream frosting.
Phyllo-Wrapped Brie with Apricot and Rosemary Chutney
Be sure to order an uncut wheel of Brie ahead of time from a cheese shop or specialty foods store. The entire wheel is baked with a flavorful chutney; any leftover chutney is great with curries or roasts.
