Ingredients

Juice of 1 lemon, or 2 tablespoons red wine vinegar or cider vinegar
2 tablespoons honey
1 tablespoon soy sauce
1/3 cup vegetable oil
4 large carrots or 6 medium peeled
1 cup raisins
2/3 cup sunflower seeds

Preparation

  1. Place the lemon juice or vinegar, honey, soy sauce, and oil in a large mixing bowl. Stir until blended. Grate the carrots into the bowl. Add the raisins and sunflower seeds and mix well. Store in a covered container.
