MARIE CALLENDER'S POTATO CHEESE SOUP

Ingredients

8 cups potatoes, peeled and cubed
2 cups onions, chopped
4 cups celery, chopped
4 cups water
2 tsp salt
4 cups 1/2 and 1/2
6 tbsp butter
1 cup sharp cheddar cheese, grated
4 tbsp fresh parsley, chopped

Preparation

  1. Place potatoes, onions and salt in water to cover in a large pot. Simmer until tender, about 15 minutes. Puree until chunky style. Return the soup to the pot and add the 1/2 and 1/2, butter and cheese. Simmer until piping hot (Do not boil). Garnish with parsley if desired.
